Shiitake and Scallion Lo Mein

Amp up your vegetable intake with this Shiitake and Scallion Lo Mein recipe.

You will need:
  • 1 lb lo mein noodles
  • ¼ cup soy sauce
  • 3 Tbsp vegetable oil
  • 2 tsp sesame oil
  • 1 lb shiitake mushroom caps, thinly sliced
  • 6 scallions, thinly sliced
  • 1/3 cup mirin
  • ¼ lb snow peas
  • 1 tsp ground ginger
  • 2 Tbsp water

Preparation

  1. Bring a large pot of water to a boil, place noodles in and cook until tender, adding snow peas to pot during the last few minutes of cooking.

  2. Drain the noodle and pea mixture and rinse under cold water until chilled.

  3. In a small mixing bowl, add together the soy sauce, sesame oil and mirin and set aside.

  5. In a large skillet or wok, heat 2 Tbsp of the vegetable oil and place shiitake mushrooms in skillet, cooking over medium high heat for 5 to 6 minutes.

  6. Shiitakes should be browned well.

  7. Add 1 Tbsp of the vegetable oil and add ginger and scallions to the skillet for 3 to 4 minutes. Add water and stir gently for one minute.

  8. Add noodles and peas, as well as reserved sauce mixture and toss until heated, 2 to 3 minutes. Remove from heat and serve.
