You will need:
  • 1/4 - 1/2 pound pork loin (boneless and chopped)
  • 2 ounces clean, diced shrimp
  • 1 cup large whole uncooked shrimp cleaned and peeled

*Preparation Tip: Keep shrimp amounts separated

  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon ground ginger
  • 1 tablespoon green onions diced
  • 1/4 cup green onions diced

*Preparation Tip: Keep onion amounts separated

  • 3 cups homemade chicken stock
  • 24 won-ton wrappers

Preparation

  1. In a medium size bowl, blend together diced shrimp, pork, soy sauce, sugar, ginger and tablespoon of green onion. Let stand in refrigerator for 30 minutes.

  2. To prepare won-tons for soup, place won-ton wrappers on dry, clean surface, so they appear diamond-shaped, with one corner pointing towards you.

  3. Before filling, lightly moisten edges of won-ton wrappers with water to help seal.

  4. Place one teaspoon of filling in middle of each won-ton wrapper. Fold top corner of won-ton wrapper to bottom corner, forming a triangle shape. Seal edges of won-tons by pressing together firmly. Then, bring right and left corners in middle and pinch together.

  5. While won-tons are being prepared, bring chicken stock to boil.

  6. Place won-tons in boiling stock. Cook 5 to 10 minutes.

  7. Shrimp should already be cleaned, deveined and peeled. Add large whole cleaned, uncooked shrimp to boiling stock. Cook 3 minutes, or until shrimp turn pinkish color. Remove from heat.

  8. Garnish with reserved green onions and serve immediately.
