Won-Ton Soup

Won-Ton Soup is not your ordinary noodle soup. Filled with pork and shrimp, Won-Ton Soup is a perfect start to any meal, or a delicious soup all on its own! This recipe serves 4 to 6.

Ingredients

• 2 ounces shrimp (cleaned, peeled and diced)
• 1/4 - 1/2 pound pork loin (boneless and chopped)
• 1 tablespoon soy sauce
• 1 teaspoon brown sugar
• 1 teaspoon ground ginger
• 1 tablespoon and 1/4 cup green onions diced *Keep amounts separated
• 3 cups homemade chicken stock
• 24 won-ton wrappers

Preparation

1. In a medium size bowl, blend together shrimp, pork, soy sauce, sugar, ginger and the tablespoon of green onion. Let stand in refrigerator for 30 minutes.


2. To prepare won-tons for soup, place won-ton wrappers on dry, clean surface, so they appear diamond-shaped, with one corner pointing towards you.


3. Before filling, lightly moisten edges of won-ton wrappers with water to help seal.


4. Place one teaspoon of filling in middle of each won-ton wrapper. Fold top corner of won-ton wrapper to bottom corner, forming a triangle shape. Seal edges of won-tons by pressing together firmly. Then, bring right and left corners in middle and pinch together.


5. While won-tons are being prepared, bring chicken stock to boil.


6. Place won-tons in boiling stock. Cook 5 to 10 minutes, then remove from heat.


7. Garnish with reserved green onions and serve immediately.

Variations

• Substitute canned chicken broth for homemade chicken stock.
• For spice, add chili flakes or your favorite chili seasoning to taste.
• For heartier meal, add cooked noodles.
• For texture, add crunchy noodles to top before serving.
• Add 1/2 cup clean, whole shrimp during step 6 for last 3 minutes of boiling, or until shrimp turn pinkish color.
• Add Thai basil to broth during last 3 minutes of boiling.
